PaleOMG’s Spaghetti Squash Pizza Pie is one of my all time favorite recipes and it helped introduce me to the art of using spaghetti squash as a base for comfort casserole dishes that are delicious, simple, and full of nutrients. This one is no exception – if you’re in the mood for Italian with a healthy spin, this recipe is for you!

INGREDIENTS: 

1 spaghetti squash, already baked with the strands scooped out

1 pound ground beef, already cooked

3 eggs

1 yellow onion, chopped

1-2 cups of broccoli, chopped and steamed

1 cup of cauliflower, chopped and steamed

1 jar pasta sauce (I use Primal Kitchen’s)

Pinch of sea salt/ground pepper

*Optional – 1/4 cup parmesan cheese

DIRECTIONS: 

Preheat oven to 350 degrees

In a large baking dish combine spaghetti squash strands, ground beef, broccoli, cauliflower, and pasta sauce and mix together until everything is well coated with the sauce

Then crack the 3 eggs into the dish and mix around until everything is well coated with the eggs

Sprinkle dish with sea salt/pepper and, using a spatula or fork, press the mixture down until it lays even in the dish

Bake in the oven for 45 minutes – 1 hour until the top is firm to the touch and bubbly

*Optional – top with parmesan cheese
