I’m not a recipe creator by any means – whatever recipes I do come up with are simple and involve few ingredients or they are spin offs of other recipes out there like my Spaghetti Squash Italian Bake from last week. I love to try more complicated and involved recipes from time to time but as a mom of 3 young kids and a busy schedule easy and quick recipes are what I typically stick to.
This frittata is just that – super simple, fast, and delicious. My kids devoured this and it’s a great way to get some added greens into their meal without them really noticing.
INGREDIENTS:
10-12 eggs, whisked
1/2 pack of bacon (I like to buy from our butcher or buy Pedersons), chopped into 1″ pieces
2 cups spinach, finely chopped
1/2 yellow onion, diced
1/4 – 1/2 cup cheddar cheese
Toppings: Salsa, sour cream, avocado, green onions, etc.
DIRECTIONS:
Preheat oven to 350 degrees
In a large cast iron pan, add bacon and saute until crispy. When bacon is about halfway done cooking add in onions and saute until translucent
Add in chopped spinach and mix in with the onions and bacon until wilted and covered with the bacon grease.
Spread the bacon, onion, and spinach mix out so that it evenly covers the pan. Then pour the eggs in to cover it
Continue cooking on stove top until edges are firm and then transfer to oven
Cook for 10 minutes or until middle is firm and set
Remove from oven and sprinkle cheddar cheese on top
Let cool for 5-10 minutes and then add all of your favorite toppings on top. Enjoy!
